Following on from last week we will use the fresh stocks to prepare two tasty soups and will make the two most common basic sauces – a b├ęchamel and a demi-glaze. Both of these categories are the basis for so many preparations in the kitchen and sauces are the finishing touch to many dishes you will prepare over the next four weeks.
